We will add 2 more calendars in the holiday menu of the plugin as shown below. One will be for delivery and other for pickup.You can set up different dates as per your convenience.
So here you set up the dates ,you will need to setup the times as well for the specific dates you chose. For that you will see a special menu at bottom of the plugin menus right below van management. There you can add time as per the date which was selected in the holiday page. This way you can set up Datewise different Timeslot in woocommerce

As you can see below the specific dates now have their own time to suit your needs. They even have an order limit for those dates.
So this way if you have a particular date on which the shop opens , closes on different time than usual you can easily do it via this customisation. It is easy to use and is a dynamic setup to make it more user friendly. This way keep your employees and customers both satisfied on holidays.
